Ingredients
- 2 cups full-fat milk
- 2 - 3 tbsp Earthen Story Organic Gulkand Shop ↗
- ¼ tsp cardamom powder
- Pinch saffron strands, soaked in 1 tbsp warm milk
- Optional: 5 - 6 soaked California almonds, 1 tsp mixed seeds (poppy, fennel, melon)
Steps
- Warm the milk in a pan to steaming but not boiling - approximately 65°C.
- Add gulkand, cardamom powder, and saffron milk. Mix well until gulkand dissolves completely. The milk will turn a soft blush pink.
- If using almonds and seeds, blend them with a few tablespoons of the warm milk into a smooth paste, then add to the thandai and whisk to combine.
- Taste and adjust gulkand quantity based on sweetness preference - gulkand brings its own floral sweetness so no added sugar is needed in most cases.
- Serve warm immediately, or refrigerate for 30 minutes and serve chilled over ice.
- Garnish with extra saffron strands or dried rose petals.
