Steps
- If medjool dates are firm, soak in warm water for 5 minutes. Pat dry.
- Pulse mamra almonds in a food processor until roughly chopped - 5 - 6 pulses. Remove and set aside.
- Add pitted dates to the food processor and blend into a sticky paste.
- Add ashwagandha powder, coconut oil, cardamom, salt, and desiccated coconut. Pulse 4 - 5 times to combine.
- Return chopped almonds to the processor and pulse 3 - 4 times - they should remain in visible pieces for texture. Do not over-blend into a smooth paste.
- Taste the mixture. The ashwagandha should be present but not dominant - the date sweetness should carry it. Adjust cardamom if needed.
- Roll tablespoon-sized portions into balls and coat in desiccated coconut. Refrigerate for at least 30 minutes. Store in an airtight container in the refrigerator for up to 2 weeks.
