Ashwagandha Date Bliss Balls - Adaptogen Energy Bites

Medjool dates blended with ashwagandha, mamra almonds, and coconut. The adaptogen snack that does not taste medicinal - earthy, sweet, and genuinely energising.

The challenge with adaptogens in food is that most of them taste like medicine - and organic ashwagandha powder, specifically, has a strong earthy, slightly bitter flavour that can dominate a recipe if you are not careful. Medjool dates are one of the few sweeteners powerful enough to partner with it rather than compete: the deep caramel flavour of the date wraps around the ashwagandha and turns the bitterness into depth. These balls taste complex and interesting rather than medicinal. They are the adaptogen snack that actually gets eaten. For a no-adaptogen version that highlights the dates just as beautifully, the Medjool Date and Mamra Almond Energy Bites are equally satisfying.

Ingredients

  • 15 Earthen Story Medjool Dates, pitted Shop ↗
  • 1 tsp Earthen Story Ashwagandha Powder Shop ↗
  • ½ cup Earthen Story Mamra Almonds Shop ↗
  • 2 tbsp desiccated coconut (plus extra for rolling)
  • 1 tbsp Earthen Story Extra Virgin Coconut Oil Shop ↗
  • ½ tsp cardamom powder
  • Pinch Himalayan pink salt

Steps

  1. If medjool dates are firm, soak in warm water for 5 minutes. Pat dry.
  2. Pulse mamra almonds in a food processor until roughly chopped - 5 - 6 pulses. Remove and set aside.
  3. Add pitted dates to the food processor and blend into a sticky paste.
  4. Add ashwagandha powder, coconut oil, cardamom, salt, and desiccated coconut. Pulse 4 - 5 times to combine.
  5. Return chopped almonds to the processor and pulse 3 - 4 times - they should remain in visible pieces for texture. Do not over-blend into a smooth paste.
  6. Taste the mixture. The ashwagandha should be present but not dominant - the date sweetness should carry it. Adjust cardamom if needed.
  7. Roll tablespoon-sized portions into balls and coat in desiccated coconut. Refrigerate for at least 30 minutes. Store in an airtight container in the refrigerator for up to 2 weeks.
