These wholesome pancakes are naturally sweetened entirely by banana and dates - no maida, no refined sugar, no packaged mix. Ragi flour gives them a deep brown colour and a calcium content that no wheat pancake can match, while the banana provides the moisture and the medjool dates provide the sweetness and the chew. Ragi is one of the most calcium-dense grains available - and a pancake is one of the most child-friendly formats to deliver it. Bilona ghee on the tawa adds richness and the characteristic warmth that makes a good pancake feel like a proper meal. Ingredients

  • ½ cup Earthen Story Ragi Flour Shop ↗
  • 1 ripe banana, mashed
  • 2 - 3 Earthen Story Medjool Dates, pitted and chopped or blended into paste Shop ↗
  • ¼ cup milk (adjust for consistency)
  • Pinch cardamom powder
  • Earthen Story A2 Gir Cow Bilona Ghee - for cooking Shop ↗

Steps

  1. Mash the ripe banana in a bowl until completely smooth. Add the date paste or chopped dates, cardamom, and milk. Mix well.
  2. Add ragi flour and fold together to make a smooth, pourable batter. Adjust milk for the right consistency - slightly thicker than regular pancake batter.
  3. Heat a non-stick pan on medium heat and grease lightly with ghee.
  4. Pour small portions of batter and spread gently into rounds approximately 8 cm in diameter.
  5. Cook on medium heat until bubbles form on the surface and the edges look dry - about 2 minutes. Flip carefully.
  6. Cook the second side until golden brown - about 90 seconds. Apply a small amount of ghee to the cooked side.
  7. Serve warm with a drizzle of honey, a spoon of gulkand, or fresh fruit.
