- ¼ tsp cardamom powder
- Pinch Himalayan pink salt
- Desiccated coconut or sesame seeds - for rolling, optional
Steps
- Dry-roast mamra almonds in a pan for 3 minutes until fragrant. Add sunflower and pumpkin seeds and roast for another 2 minutes. Cool completely.
- Pulse roasted almonds and seeds in a food processor into a coarse chop - 6 to 8 pulses. Remove and set aside.
- Add kalmi and ajwa dates to the food processor. Blend into a smooth, sticky paste - add 1 tsp warm water if needed to help it blend.
- Add the chopped nuts and seeds, cardamom, and salt to the date paste. Pulse 5 to 6 times to combine - keep visible texture.
- Roll tablespoon-sized portions firmly between your palms into smooth balls.
- Roll in desiccated coconut or sesame seeds if desired. Refrigerate for 30 minutes before serving. Store in an airtight container in the refrigerator for up to 3 weeks.
