The commercial granola bar market has done something remarkable: it has taken oats, seeds, and honey - three of the simplest whole foods - and found ways to add glucose syrup, palm oil, and seventeen other ingredients that make the result last twelve months in a warehouse. This is the standard story of packaged health food - the label promises what the ingredients contradict. These bars do the opposite. Sunflower seeds, pumpkin seeds, raw forest honey, extra virgin coconut oil. They take fifteen minutes and they taste like the ingredients, which it turns out is all they needed to taste like. - 1 cup rolled oats
- 3 tbsp Earthen Story Raw Forest Honey Shop ↗
- 2 tbsp Earthen Story Extra Virgin Coconut Oil Shop ↗
- ¼ tsp Himalayan pink salt
- ½ tsp cinnamon or cardamom - optional
- 2 tbsp flax seeds or sesame seeds - optional
Steps
- Line a 20x15 cm baking tin or container with parchment paper, leaving overhang on the sides for easy removal.
- Toast sunflower seeds, pumpkin seeds, and oats together in a dry pan over medium heat for 4 - 5 minutes until the oats are golden and the seeds are fragrant. Stir continuously. This toasting step is key to flavour - do not skip it.
- Remove from heat and add salt, cinnamon, and flax seeds if using. Transfer to a bowl.
- In the same pan, gently warm honey and coconut oil together on low heat, stirring until fully combined.
- Pour the warm honey-coconut mixture over the toasted seed and oat mixture. Stir quickly and thoroughly - every piece should be coated.
- Transfer to the lined tin and press down very firmly with the back of a spoon or a flat-bottomed cup. The firmer you press, the better the bars will hold together.
- Refrigerate for at least 2 hours until completely set. Lift out using the parchment overhang and cut into bars with a sharp knife. Store in the refrigerator for up to 2 weeks.
