The colour of my atta is different from the last pack.
Wheat colour varies by harvest, region and season. Flour that looks identical every time has usually been blended across many sources to hit a fixed appearance. Ours is milled from single-source certified organic wheat, so it shifts.
Why does it spoil faster than the atta I usually buy?
Stone grinding retains the germ, and the germ contains oils that eventually turn rancid. Commercial atta frequently removes or heat-treats the germ to extend shelf life. Store airtight, refrigerate in summer, and buy a pack size you will finish.
My dough feels different and absorbs more water.
Whole stone-ground flour has bran and germ intact, which absorbs more water than finely roller-milled flour. Add water gradually, knead a little longer, and rest the dough 15 to 20 minutes before rolling.
Is 100 percent whole wheat the same as the atta sold as whole wheat in shops?
Not always. A lot of commercial atta is roller milled with some bran added back, which is not the same as grinding the whole grain intact. Ours is stone ground at low speed with nothing removed and nothing added back.
How do I know it is genuinely organic?
The wheat is sourced from farms certified under NPOP and India Organic, and every purchase is backed by a transaction certificate tracing the certified organic chain from farm to us. On top of that, batches are lab tested at NABL-accredited labs and the reports are published publicly on our Reports page.
